@musset75 From the score editor, open the Navigation Menu (arrow at top-right corner), then choose the Instruments menu.
The rest is identical to Symphony Pro on iPad. Within the Instruments menu, there will be icons to the left of each part. By highlighting one or more of them, you will reduce the score such that only the corresponding instruments are displayed (meaning non-highlighted staves will be hidden). After you're done making changes, make sure to choose Apply at the top to apply them.
