To delete any number of measures, simply to tap with two fingers on the measure you want to delete first. This is a shortcut to open the Measure Dialog.

From this menu, switch to the section labeled "Bars" and select the "Delete Measures" option. From there, just enter the number of bars you want to delete starting from the selected measure, or simply tap "Delete to end" to remove all measures through to the end of the project.
